- Black Pepper TofuI'm not the type of person to try to make food lower fat but this recipe calls for an insane quantity of butter. I used 8 tablespoons of butter and definitely think I could have still used less. I used half soy sauce and half molasses since I didn't have any kepis manis. You could use Thai thick soy sauce instead though. It's definitely a must make dish. It's amazing.

I bought the first Tartine cookbook hoping that the recipe would be in there but it wasn't. Now that I have the Tartine Bread book, I know why. The Basic Country Bread recipe spreads across roughly 30 pages with photographs of all the steps. The recipe chapter is followed by a chapter which explains in further detail the steps for making the bread. It's not written for the scientist-type (and for that I recommend Peter Reinhart's recipes). This is a story of bread making and how to do it the primitive way. There's a lot that you learn along the way-- how starter should smells, how the dough should feel along the way, and how it sounds after it comes out of the oven. It's sort of a romantic way of looking at bread making. The starter took about a week to grow and become strong and I baked two beautiful, flavorful loaves on the 8th day. Chad doesn't answer all your questions about bread making but he tells much and ask you keep at it. It requires a lot of patience and faith; a little like raising a pet.

The Tomato Tart recipe (and the tart dough recipe) is simple but memorable and has me waiting for heirloom tomato season to start. Way in the back of the book is an amazing Swiss Merginue Buttercream recipe which seems a little fussy but it's hand down the best frosting recipe I've found. It's not preachy about what you should eat, it just lays out hundreds of great recipes that are easily adaptable. When I first started cooking, I bought a copy of this book, dogeared all the recipes that sounded interesting, and got to chopping and sauteing and baking. Over time, I feel like it taught me how to cook. Even the most simple sounding recipes would turn out wonderfully. Madison's book is essential in my kitchen.
