- Spicy Mixed Vegetable StewAlong with the Spicy Lentil Stew, this is a favorite. There used to be an Ethiopian restaurant near my house, and these two dishes fairly closely replicate the amazing food experience I had at that restaurant. You really need to have a batch of injera with the stews, though. In St. Paul/Minneapolis, our local Cub foods carry injera (as there are sizable populations of African immigrants in the Twin Cities). 3 likes Can’t Like Unlike Like 3 likesThis was one of my first vegetarian cookbooks, and I have made several recipes from many different cuisines. I very much appreciated the recipes that are not really found in many other cookbooks, such as the recipes from North Africa and the Northeast African Highlands. One memorable cooking experience with this book was a dinner party a friend of mine threw. She assigned each of us a recipe from the Africa section of the book, and we had an amazing African meal, complete with injera platters. I rather like that the book lends itself more to browsing rather than quick...
