A delightful use of herbs in traditional and non-traditional ways. The recipes are elegant enough for special meals and great for mid week cooking, too. I love the pumpkin bay torte which I now make every Thanksgiving. My English neighbor who believed that she didn't like pumpkin, loves this pie. Hollyhock is a gorgeous retreat center on Cortes Island in Canada's British Columbia. This cookbook is a collection of recipes that have been created using the bounty of their garden and the sea. The recipes are well designed for beauty, economy, taste and nutrition. The food of Hollyhock nourishes deeply. The recipe amounts are scaled down for family cooking, but are easily adapted to large groups. They have an entire section that includes very practical advice for cooking for large crowds. Many of the recipes use alternates for dairy and wheat. I find it very inspiring.
